DESTILADOR ESPECIALISTA
OBJETIVO DEL PUESTO
Revisar las descargas de mosto y cargas de alambiques, así como el proceso de destilación y rectificación del Tequila de acuerdo con el programa de Producción.
RESPONSABILIDADES Y ACTIVIDADES
- 1) Asignar tares y organizar las actividades del personal a su cargo.
- 2) Registra niveles de inventarios en tanques de ordinario, cabezas y colas para reportarlo al Supervisor de Producción.
- 3) Apoyar en las actividades de descarga de mosto y llenado de alambiques.
- 4) Realizar el rectificado del tequila de reproceso proveniente de Envasado Tequila, Graneles y Calidad.
- 5) Realizar el rectificado, segunda y tercera destilación del tequila para envió al área de Graneles.
- 6) Coordinar con el vinacero y descargas la flemaza a los tanques destinados para dicho propósito.
- 7) Revisar la liberación de tinas de mosto para destilación.
- 8) Revisar el proceso de destilación: cortes, grado alcohólico y temperaturas.
- 9) Registrar en reporte de destrozamiento y rectificación para reporte a Supervisor de Producción.
- 10) Monitoreo que el equipo y maquinaria del área de trabajo se encuentre en buen estado, reportar desperfectos al Supervisor para su reparación.
- 11) Supervisar y registrar el cumplimiento de limpieza asignados a su personal.
- 12) Destilar agua para el proceso de producción y realizar la extracción de muestras de esta para su análisis en el laboratorio.
- 13) Ejecutar las actividades y apoyar a otras funciones y/o puesto cuando estos sean de naturaleza similar o equiparable a puesto original.
- 14) Aprobación de permisos de trabajo de acuerdo con el procedimiento vigente.
- 15) Cumplir con los controles operacionales y administrativos asociados a los peligros identificados y evaluados de las actividades y/u operaciones del puesto, así como reportar situaciones inseguras de los mismos.
- 16) Cumplir con las disposiciones de manejo integral de residuos, manejos de sustancias química peligrosas, respuesta a emergencias e identificar los aspectos e impactos ambientales del área.
- 17Cumplir con los prerrequisitos operativos de inocuidad aplicables al área, así como las disposiciones al personal que regulan las prácticas obligatorias que de forma directa pueden afectar la higiene, salubridad y calidad del producto.
REQUISITOS Y EXPERIENCIA
- Secundaria terminada - Requerido
- Preparadora terminada - Deseable
- Experiencia mínima de 1 año en la Elaboración de Tequila
- Experiencia mínima de 1 año -en Manejo de personal
- Conocimiento básico en proceso de destilación
